Healthy Muffin Recipes



BLUEBERRY MUFFINS

1 1/2 cups whole wheat pastry flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup honey
1/4 cup canola oil
1/3 cup soy milk
1 large egg
2 tablespoons lemon juice
1 1/2 cup frozen blueberries

Sift the 4 dry ingredients into a mixing bowl. Make a well in the center.

Beat together the remaining ingredients (except the berries). Pour this into the well, and stir gently until just blended, gradually adding the berries.

Fill muffin cups 2/3 full. Bake 30-35 minutes at 350 degrees.

Cool in pans 5-10 minutes before removing.

BRAN MUFFINS

2 cups whole wheat pastry flour
1 1/2 cups oat bran
1 1/2 cups raw bran
2 cups rice or soy milk
1/2 cup canola oil
1/2 cup honey
1/2 cup Sucanat/dark brown sugar
3 eggs, slightly beaten
1 tablespoon baking powder
1 teaspoon sea salt
2 medium apples, shredded
3 carrots, finely shredded
2 bananas, mashed
1 teaspoon cinnamon (health benefits of cinnamon)
1 cup pecans or walnuts, chopped fine (optional)

Preheat oven to 375 degrees.

Beat oil, Sucanat/brown sugar, honey, carrots, bananas, apples, eggs and milk together.

Add the wheat and oat bran and let sit 10 minutes. Pre-mix the dry ingredients and fold into the bran mixture until just mixed (don't overmix).

Add pecans and raisins.

Fill muffin tins with mixture (don't overfill) and bake for approx. 20 minutes.
