Healthy Muffin Recipes
BLUEBERRY MUFFINS Sift the 4 dry ingredients into a mixing bowl. Make a well in the center. Beat together the remaining ingredients (except the berries). Pour this into the well, and stir gently until just blended, gradually adding the berries. Fill muffin cups 2/3 full. Bake 30-35 minutes at 350 degrees. Cool in pans 5-10 minutes before removing.
BRAN MUFFINS Preheat oven to 375 degrees. Beat oil, Sucanat/brown sugar, honey, carrots, bananas, apples, eggs and milk together. Add the wheat and oat bran and let sit 10 minutes. Pre-mix the dry ingredients and fold into the bran mixture until just mixed (don't overmix). Add pecans and raisins. Fill muffin tins with mixture (don't overfill) and bake for approx. 20 minutes.
